The Lampery: Summer Menu

Any foodie who visits The Lampery is always excited for the changing of the seasons in anticipation of what Michelin-star trained Head Chef, Marcello De Stasio will drop next. This season is no exception and our new summer menu is nothing short of spectacular. This year, the dishes are wildly colourful and vibrant, wholesome and inspiring. We sat down with Chef De Stasio to find out his inspiration behind it and here’s what he had to say…

“The summer menu is all about the fresh ingredients. Whenever I’m designing a menu, I first of all look at what’s in season and what I can source locally, as any good dish starts with quality ingredients. For the summer menu I’ve integrated beautiful seasonal produce into the dishes such as figs, kale and mango, and I love using fish and seafood in summer. It’s then all about pairing together flavours in ways that will enhance them and will present beautifully on the palate. Each time I craft a menu, I include some classic favourites that everyone loves, and then a few dishes you likely haven’t seen before. That’s the beauty about exploring the eclectic mix of what is British cuisine today; I get to be really creative because it’s so diverse. I’m also inspired by living in one of the most multi-cultural cities of the world, which allows me to explore different practices of cuisine from a range of cultures. From my Michelin training background and working under a Japanese Chef for three years, I really appreciate the different styles of cuisine throughout the world, and I believe this is evident in the new summer menu. The new dishes have an obviously Asian inspiration, from the teriyaki salmon, to slow cooked pork with nori and coconut sauce, and the addition of Japanese citrus fruit yuzu gel. The menu is original and offers something exciting for every taste. It’s been deliberately crafted to be colourful to the eye, as I believe this reflects the beautiful and bright season that summer is. I can’t wait for you to taste the seasons.”
